What says spring louder than fresh salad?
Here's a salad recipe that's hearty enough to be the whole meal!

Mediterranean Chicken Salad
For the Chicken:
2 Chicken Breasts
3Tbsp olive oil
3Tbsp lemon juice
3 garlic cloves-minced
3 Tbsp fresh parsley
½ tsp paprika
¾ tsp dried oregano
salt and pepper to season
Mix all the above ingredients and marinate 1-2 hours. A gallon ziploc bag works well to marinate it. It can be longer if desired.
Place on hot grill. Chicken internal temperature should be 165 degrees.
Slice or cut into bite pieces to serve with the salad.
For the Salad:
6 cups Salad Greens (I used kale, spinach and lettuce)
½ cup Cherry Tomatoes -halved
1 Cucumber sliced
¼ cup sliced Red Onion
Feta Cheese
Black or Kalamata Olives-optional
Turnips- optional
For the Vinaigrette Dressing:
½ cup olive oil
¼ cup canola oil
¾ cup Apple Cider Vinegar
½ balsamic vinegar
2 tsp garlic powder
2 tsp oregano
2tsp basil
1 ½ tsp black pepper
1 ½ tsp salt
Combine all the above ingredients. This makes 2 cups of dressing.
