Apple Cider Roast Chicken

Ingredients:

1 whole Chicken

salt and pepper

3 Tbsp of butter

2 cloves of garlic

1 Tbsp thyme

1 tbsp chopped sage

1 Tbsp chopped rosemary

2 cups of apple cider

3 apples quartered

2 onions, quartered


Directions:

Pat the chicken dry.

Sprinkle salt and pepper on all sides of the chicken, including the inside.

Mix together the butter, garlic and herbs. Coat the entire chicken with the butter mixture.

Put a couple of the quartered onion and apple pieces into the chicken.

Add the rest of the apples and onions to the your roasting pan.

Place the chicken in the roasting pan.

Heat the apple cider until it starts to simmer, let it simmer for 5 minutes. Pour it around and some over the chicken. Just be careful, you don’t want all the herbs and butter coming off!

Roast the chicken at 450 for 30 minutes. After 30 minutes, lower the oven temperature to 350.

Baste the chicken every 15 minutes until it has finished cooking. Approximately 30-45 minutes. The internal temperature should be 165.
