Ingredients:
6-8 slices bacon, cooked and crumbled
8 eggs
½ cup whole milk cottage cheese
1 cup shredded cheddar cheese
½ tsp salt
black pepper
Directions:
Preheat the oven to 325. Set a 9x13 baking dish on the bottom rack. Bring 2 cups of water to a boil.
Grease a 12 cup muffin tin. Divide the cooked , crumbled bacon evenly between the muffin cups.
In a blender combine the eggs, cheeses, salt and pepper. Blend on high for 30 seconds.
Pour the egg mixture into the muffin cups. Fill each cup halfway and then evenly divide the remainder of the mixture.
Pour the boiling water into the 9x13 baking dish. Set the muffin tin on the rack above the baking dish.
Bake for 20 minutes.
