Homemade Mayonnaise

Its the time of year where I find myself using lots of mayonnaise. Broccoli salad, coleslaw, chicken salad, egg salad, homemade salad dressing and etc.

If you’re like me you hate that most store bought mayonnaise includes soybean oil. You can make your own using avocado oil or olive oil!

I have found that a stick immersion blender works the best. My first try I used my regular blender and

it did not mix well

 

Makes approximately 3 cups

 

Ingredients:

2 large eggs

1 Tbsp lemon juice

1 tsp salt

½ tsp distilled vinegar

½ tsp ground mustard

2 cups light olive oil


Instructions:

Add eggs, lemon juice, salt, vinegar and ground mustard to a wide mouth mason jar. Use an immersion blender and blend until the mixture is thoroughly mixed.


With a slow steady stream, add the olive oil while continually blending. Once all the oil has been added and the mayo is fully blended, adjust any seasonings.
