Ingredients:
12 eggs
2-3 sliced of bacon, finely chopped
1/3 cup mayonnaise
1 Tbsp apple cider vinegar
freshly ground black pepper
2 Tbsp finely chopped pickled jalapenos
24 slices of pickled jalapenos
paprika for garnish
Directions:
Place eggs in a large saucepan and cover with water. Bring to a boil and boil for 10 minutes. When the eggs are done place them in an ice water bath.
Cook the bacon until crispy.
Once the eggs have cooled peel and halve each egg. Scoop out the yolks into a bowl. Add the mayonnaise, vinegar, and a few grinds of pepper. Stir and mash with a fork until smooth and well combined. Stir in the chopped jalapenos.
Fill the whites of the egg. Top each egg with a jalapeno slice, sprinkle with bacon and paprika.
