Taco Salad

This is one of my standbys for a quick and easy summertime meal. Perfect for a hot day when you’re looking for a lighter fare that does not require starting a hot oven! Plus you can be creative with what you add to it. The salad toppings can be whatever you have on hand.

Ingredients:

1 lb ground beef

1 can beans (can be whatever you have on hand. I like black, kidney or cannelloni the best)

1 Tbsp chili powder

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp red pepper flakes

¼ tsp dried oregano

½ tsp paprika

1 ½ tsp cumin

1 tsp salt

1 tsp black pepper

Brown the ground beef then add in beans and spices. Stir until combined and warmed through.

 

1 bag tortilla chips

lettuce/ salad greens

your favorite salad toppings (we like tomatoes, cucumbers, peppers, olives, shredded cheese, avocado, sour cream and salsa)

your favorite salad dressing

Crush a small handful of chips on your plate, layer the meat and then the salad on top. Top it off with salad dressing. Warning your pile will always end up larger than intended!
