Peruvian Roasted Chicken, Pollo a la Brasa

 

We first tried a Peruvian Whole Roasted Chicken at a tiny little restaurant in New York City. We were starving hungry, and it was delicious! When I got home to the farm I decided I had to try to replicate it, and was happy to discover that they are quite simple to make. While the chicken we had in New York was roasted rotisserie style, I found that roasting it in a pan in the oven works just fine, and requires no special equipment! Here I also share a recipe for a green dipping sauce that isn’t a requirement, but it adds a unique flavor, and I highly recommend it.

Now, here's the recipe:

 

Chicken Ingredients:

4-5 lb North Valley Pastures whole chicken - Thawed

3 TBSP olive oil

¼ cup lime juice approximately 2 limes

4 garlic cloves minced

1 Tbsp salt

2 tsp paprika

1 tsp black pepper

1 Tbsp cumin

1 tsp dried oregano

2 tsp sugar

Directions for the chicken:

Combine all the seasoning ingredients.

Using your fingers loosen the skin over the breast. Spoon some of the seasoning under the skin. Rub the remaining over the outside of the bird.

Heat oven to 475. Place chicken in a roasting pan. (I don’t actually own a roasting pan so mine goes in a cast iron skillet). Roast at 475 for 20 minutes. Then reduce the temperature to 350. Continue roasting until chicken reaches 165 degrees, approximately another hour and 15 minutes.

Note:  Prior to roasting I "spatchcocked" my chicken. This is the removal of the backbone of the chicken, allowing it to lay flatter in the pan. This is totally optional, a whole chicken works just fine. If you are feeling adventurous, its a simple process and you-tube has some great videos showing how to spatchcock a chicken.

Green Dipping Sauce Ingredients:

1 cup fresh cilantro loosely packed

1-2 jalapenos

1 whole pepperoncini or 1 habanero

2 tbsp grated cotija cheese or parmesan

1 clove garlic minced

1 tbsp olive oil

1 tbsp lime juice

1 tsp white vinegar

½ cup mayonnaise

1/8 tsp salt

Directions for Green Dipping Sauce:

Combine all ingredients in a food processor or blender. Puree. Store in refrigerator until ready to serve.

 

 

 

Serve it up to the hungry family, and prepare for complements!!
